TROUT WITH HAM
4 trout, about 10oz each, cleaned
salt and freshly ground black pepper
4 tablespoons olive oil
4 oz serrano ham, finely chopped
2 cloves garlic, finely chopped
1 tablespoon chopped fresh parsley
Juice, 1 lemon
Parsley sprig, to garnish
Heat 2 tablespoons oil in a large frying pan, add trout, in batches if necessary and fry for about 6 minutes until flesh flakes when pieced with the point of a sharp knife. Transfer to a warm plate, cover and keep warm.
Put remaining oil in small saucepan, add ham and garlic and cook, stirring occasionally until beginning to brown. Stir in parsley and lemon juice and heat for a few minutes. Pour the mixture over the trout. Serve garnished with parsley sprigs.
